History of the cellar

Cantina Fassati was founded in 1913 and is today one of the largest wineries in Montepulciano
with a total surface area of ​​101 Ha of land of which 89 Ha of vineyards, 4.50 Ha of olive trees for production
of extra virgin olive oil.
The vineyards, located in a hilly position with excellent exposure, ideal for proper ripening
of the grapes are characterized by different types of soil: tuffaceous, sandy, clayey. The vineyards
they are pruned using the Guyot method, so that the vine is not exploited to the maximum,
It will have a lower yield, but certainly a higher quality.
The cellar includes a winemaking area equipped with modern and functional structures that
have the aim of enhancing the peculiar characteristics of the grapes, steel tanks where it is
the wine was awarded for its first passage, the magnificent and suggestive cellar with oak barrels
Slavonian with capacities from 20 to 155 Hl and French barriques that guarantee the refinement of the
precious Nobile di Montepulciano, as well as the diamond point of the territory. And it is here that the
Wine lovers, on an oenological-gustatory journey, will travel through more than a century of history
of the Fassati Winery, through wine tastings in the suggestive Bottaia room. In addition to the
possibility of tasting the wines of our cellar in a welcoming environment, it is possible
organize tastings of typical Tuscan products, naturally seasoned with our Extra Virgin Olive Oil
Olive.
