History of the cellar

The Castel De Paolis winery was born in 1993 in Grottaferrata, located 270 meters above sea level, enjoying one of the mildest and most pleasant climates in Italy. It was born from an idea by Giulio Santarelli and today carried forward together with his son Fabrizio who personally takes care of marketing and promotion in Italy and around the world. In just a few years, in fact, the company has been able to establish itself in the most important restaurants and hotels in Rome and in many foreign markets, from China to Japan, from the United States to Brazil and in many European countries.

Particular attention was then paid to the choice of the number of vines per hectare, brought to 5500, with a production load reduced to 1-1.5 kg per vine, and the introduction of the thinning practice for the reds, the abolition of any form of fertilization.

The company is located on the ruins of the medieval Castle, from which it takes its name, which in turn was built on ruins from the Roman era. Even today, in fact, the company's Cellar can enjoy the precious "Roman Cistern", in which the Barriques with the great red wines for aging rest.

In this magical environment, tastings are often organized with guests and tourist groups who come to visit the Winery. A large panoramic room allows you to taste the company's wines with a view that ranges from the vineyards below to the entire city of Rome, up to the Lazio coast where in the afternoon the sun diving into the sea paints an orange mirror.

The territory of the municipality of Grottaferrata, together with those of Monte Porzio Catone and Frascati, constitute the Frascati DOC.
